Big Ben Wallace made commercials and appeared on a videogame cover.

He eventual caved and joined 2K13, but only on the Dream Team and only after Jay-Z called to reel him in.
This is correct. Back when 2K13 dropped, Chuck did an interview here in Chicago where he mentioned that he doesn't allow the NBA to use his likeness for anything because he doesn't like the way they treat the retired players of the league. He mentioned that he doesn't like that the retired players only get 10 percent (I guess of everything the NBA uses their likenesses for?) and he didn't think it was fair to only give the retired players 10 percent and he certainly wasn't going to do anything for 10 percent. So he explained that he told them that he'd do the deal and they could use his likeness for whatever they wanted if they gave him 50/50 and gave his share to the retired players association because he feels like he should give back to the people that opened the door for him and he doesn't need the money anyway. According to Chuck they told him that everybody else did it the other way and he told them he didn't care what everybody else did so he turned them down. Then he said that he got the call from Jay-Z and the only reason he agreed to be in was because of Jay-Z. He said they were offering him $50,000

Need to add the 1962 Warriors with Wilt Chamberlain in his prime and Paul Arizin.
Also need to add the Bucks or Lakers with Abdul Jabaar.

If I had to take a guess as to who the 7 remaining teams are, I can only judge based off the fact that they're going the '00s route.

1. 2003 San Antonio Spurs w/old robinson, prime Duncan, young tony parker, young Manu, stephen jackson, steve kerr, steve smith, bruce bowen, and a few others.

2. 2002 Nets w/Prime J.Kidd, richard jefferson, and others.

3. 2006 Heat w/ prime wade, old shaq, old mourning, old gary payton, young haslem, and others

4. 2007 Warriors w/ Baron davis, stephen jackson, monta ellis, and others

5. 2004 Pistons w/ Billups, prince, hamilton, wallaces, others.

6. 2005 Rockets w/ healthy TMac, Yao, battier, and others.

7. 2005 Suns w/ Nash, stoudemire, Marion, Grant hill, others.

While none of these teams would be certain, I'd be SHOCKED if the Pistons or Suns were snubbed. Those 2 teams are dead locks for 2k16 if the 2003 Mavs and 2000 Blazers made it.

That would be sick (for me) if the 08 lakers were in it too.

If the more recent angle is the route 2K's pursuing, I actually dig all of those choices, particularly the 2004 Pistons, 2002 Nets and 2007 Warriors. A signature Kenyon Martin dunk package would fill a void in my life.

Also, that 2003 Spurs team would be a great "Full Circle" squad, harking back to the beginning of an era.

I personally thought seeing the 2000 Suns could be fun too, still being in the Sunblast jersey era with Penny and a blond Jason Kidd to boot. I can't really justify their inclusion though - they didn't do anything. I suppose same goes for the 2006 Nets with Kidd, Vince Carter, and Richard Jefferson. I think they'd be a fun squad but perhaps only on a personal level.
