I use legend.
Under game balancing - I turn up stamina (so players refresh a lot quicker), turn up finisher reversal almost all the way up (this way finishers are more dramatic as you don't know if he'll pull it off or not), and i turn finishing power way up (this way when someone hits the finisher it's almost always over).
I also turned up foreign object power. When someone gets hit with a chair, table, etc - I want that to be epic too.
I'd turn it on legend - then turn finisher reversal, finishing power, and foreign object power all the way up minus one.
