What kind of difficulty settings does this game have? Any sliders? Thanks guys!

There are sliders for things like penalties, game speed, clock speed, and accelerated clock. Difficulty settings are only "rookie, pro, all pro, hall of fame".

Does this game have a feature where you can create a player? I ask this because I like creating players and putting them on a team.

No it doesn’t have create a player.

You can still edit an existing player (before you start a Franchise game), so same effect as a create-a-player.
