I'm pretty sure the reason for that was because like Ramone said in one of the videos, they "faked" the hat shadowing in previous games, so if you would have been able to change that, the shadows on the players' faces would have been off. I'd be surprised if you still can't edit cap brims this year, with the new face lighting and such.

True... I do remember someone pointing out a UNIFORM section in the edit player, so maybe... We'll find out.
