They were able to get QB cadences through NFL films, so I believe they should do the same for the sounds of the tackles as well.

They did get real hit sounds from the NFL. Look at the audio blog.

I forgot all about them, but it wasn't something I was looking for though either. But the cadences and overall atmosphere are all noticeable.

That was the first thing that came to mind when I was playing the demo but that's why I've never looked into it because it was a demo.
