One thing to try is go onto XBOX live for an online game. It might prompt you to update your rosters. Sometimes they update the online rosters before offline.

Yeah it's time consuming but if you want really accurate rosters it's the only way. I duno, I just think that if it's that important to you it's not that big of a deal to spend a few hours doing it yourself; not that I wouldn't appreciate EA doing a better job in the first place..
