I did a little test. I created a all 3 back playbook. See the playing calling to furthest
It could go to make it run heavy and set the playing to really aggressive in the Coaching Philosophy menu and sim two seasons. One with option plays and the other with no option plays in the playbook. I got some interesting results.

Team Record
10-2 with option plays.
7-5 with no option plays.

Single season yards record by a RB.
1314 with option
1603 with no option plays.

Very interesting. Win more games with option plays. Stats are better with no option plays in the playbook.

Were the yards diversified more between the backs and QB in the option playbook?

I was wondering this as well, as ususally I can never predict who will end up getting the bulk of the rushes.. and sadly, we all know sometimes its the player far worse in the backfield.
