Yes, I believe so. You just need to unlock the CPU team and make the edits to the depth chart and then return the CPU team to locked status.

I did this a while ago and it seemed to work.

Let's say I play a season with the Panthers, will my opponents have the updated nfl teams and rosters also?

WOW, just fired up a few games - AMAZING work sir. Donation will definitely be coming your way. Even though I am more of an online gamer, I will definitely enjoy a few seasons this summer before going back to school.
