Of course if you play the tutorial, it will tell you to tap the button (X/square) when it appears on the head of the player and if you tap it perfectly, a green circle will appears. I usually don't look for that icon on the head but rather just feel it when they first make contact to make the move. I usually succeed ~80% of the time.

I found that after you tap R2 to engage the OL, there is a short moment when the player first makes contact with OL perfect to make a move. If I miss that moment, I usually get stuck and have to wait a sec or two until next chance come up. The higher the power/finesse moves stat is, the longer that moment and the higher successful rate it seems.
