I figure it would be Aldo, Rousey, or Weidman. The two fighters with the highest profiles right now are Rousey and McGregor, but between those two I would pick Rousey since she is the Champion and has many title defenses. McGregor is still just the Interim Champion and it would be odd to put him on the cover with Aldo still technically number 1.
McGregor has a much bigger international appeal then Aldo though. At the very least McGregor will be the cover boy for the non USA version of the game.

True but I expect if they go with McGregor then Aldo will also be on the cover. Pretty much what they did for UFC 1 with Jones and Gustafsson.
Seems unlikely they'd go with anyone other than the money machine that is Rousey, with a small chance it could be McGregor (or possibly both.) Going any other direction would be pretty shocking. Weidman, Cormier, etc don't have nearly the casual recognition.
An Aldo/McGregor cover is unlikely because that fight will be long over by the time this comes out.
Rousey makes sense except that to the casual gamer who doesn't really follow the ufc having a woman on the cover might make the cover slightly misleading that the game is for woman. Although by launch there could be news of a cyborg fight. Making her profile higher.
Her crossover appeal is through the roof. A casual gamer is more likely to grab a copy off the shelf with her in the cover than any other UFC fighter. Rousey is as close to a household name as the UFC has today.

It's well within your right to pass, but doing so because of who is on the cover seems silly to me. I pay money for what's on the actual game disk, not what the box art looks like. But again, it's your money and how you choose to spend it is none of my business.
