Go to settings and change injuries to manual. Then go to the disabled list and hit R1 to go to your roster. Find the player you don’t want injured and hit X. Then, “remove injury.”

I've tried this, it worked once and now is not working. Any suggestions.?

Make sure that you have the correct profile selected.

In franchise mode there is a holistic setting to turn injuries off. I'm not sure if you can change this once you start playing the franchise as I always set them up with 'off'.
(I know, but it's my universe :-) )
