Obviously the game uses the coaches poll to determine the teams ranking up until Bowl Season when it changes to BCS for 1 week...

Is there a way to change it from defaulting to the coaches poll to instead the Media poll during the season?

There is no built in feature. You'd have to mod the game with the editor.
