Yeah it's kinda silly the way they did that only putting specific matchups on there (looks like the Thursday, Sunday night, Monday games plus some rivalries), but you can effectively choose any game from the schedule by changing your favorite team from the main menu game options. If I pick the Rams for example, their game becomes the "Favorite Team's game" slot.

There's always the custom game option too, of course.
