Irritating a guy has me in full mount and my guy won't transition on the bottom but instead roll over so my opponent is on my back and then it's like my guy won't grab his leg either to get him off me. ********.

A few fighters don't have the shrimp back to half guard from full mount modified transtion. However you can transition to half guard from back control with a modified transition

A huge disadvantage in ranked matches imho

I would like to use Jorgensen more often but because of this missing transition I'm using McGregor or Jung instead.

It's not too bad because if you just sit there and block, the ref will stand you up. Also, a lot of fighters have a special transition from back mount to half guard.

If someone postures and occasionally throws, the standup will not come.

I've found that a few people online will give up their back and cover up because it's almost impossible to do serious damage from there.

It is, but you will win the round if they don't try to escape. Also the RNC, is only a 3 stage submission. You don't want to give up your back.
