I win too easily

I am playing a franchise and only playing the "AA" games. I am the Altoona Curve and am currently 10-2.

My pitching is always lights out, but I when I put the pitching difficulty to veteran then it is too tough for me. Is there any sliders I could use that would give me good games that I don't always win?

Win 4-2
Win (15) 3-1
Win 7-1
Win 2-0
Lose 2-3
Win 5-0
Win (11) 3-2
Win 4-0
Lose (11) 5-6
Win 6-3
Win 3-0
Win 6-0

I will do that, but I am afraid I won't score many runs because I am already lucky to get 5 on Rookie.

I use meter pitching right now, so I should use pulse instead?

Veteran pitching I left on for 3 innings, and they managed 8 runs.

I have also not tried dynamic difficulty, should I do that?

Yes.

It never hurts to try and find an ideal difficulty level.

Try bumping pitcher control & consistency down a notch or two. Don't overthink or overdo this though - fair warning, there could be a 10-game losing streak right around the corner. You just never know with this game. It's a long season and 10-2 is a nice start but that's about it. Be "concerned" when you're 20-2, or 35-5 or something. For all you know you'll be 15-9 in a few days. Just saying.

Rookie might just be too easy for AA games in general though. Try Dynamic Difficulty.

Do you think that moving the "CPU hitting" sliders up a few notches would help?
