Help me create a team...

So, maybe this has been covered elsewhere, if so, I apologize in advance and maybe you can just point me to a link that covers it.

Anyway, what I'm trying to do is basically re-create a league of high schools teams from my state (Wisconsin). If possible, I'd like to use the NHL division set-up and edit it so that I have 30 high school teams. I'm not SUPER picky about how it'll look, I'm not going to try to re-create 30 custom arenas, perfect jerseys, etc., I really just want the team names changed so they show up in the standings, and the jerseys so that they at least somewhat reflect the high school team's colors I want to use. I'm not looking to create rosters or anything, I'm fine with either just random player names or current NHL rosters. I don't need to play online with these teams, I just want to create them so I can have some fun offline on my own. Is this possible, and what would be the best way to go about it if so? I don't HAVE to use NHL 14, so if it's easier done on 13 or 12, so be it, but it'd be for PS3, if that makes a difference.

I did this (sorta) a few years ago with EA's college football game and online team editor. I created a custom conference with 12 local high school teams. I would have liked to do 120 teams, but the limit at the time was 12 user-created teams in the game at any time. Is there a limit to user created teams at a time in the NHL series?
