I know in the console versions you can. Anyone know if it's possible on the vita?

Yes, you can take a screenshot of anything on the Vita, it's a feature of the device.

Simply press the PS+start buttons at any time... and Viola! They save to your Vita photo album under 'screenshots'

Yep, great feature. I use it all the time in Madden and FIFA, too.
