Is there anyway to separate your player career from your coaching career? I dont want my created player affecting my franchise mode and vice versa

Yes just create two separate careers. Create one connected franchise as a player then create another one as an owner/coach. You can have multiple franchise/careers saved to one PlayStation/Xbox.
