Dynasty with Weak Team in Power Conference

I'm interested in starting up an offline dynasty with a weak (e.g. 2 star) team in a power conference. I enjoy building up a weak team into a dominant one while playing top ranked teams during the season (rather than dominating in a non-power conference and then waiting for a challenge in a bowl game at the end of the season). Maybe Minnesota, UCLA, Ole Miss - What team would you recommend and why?

I would say Indiana. I watched their Freshman QB tear up IOWA last year in person in his first start. Depending on the system you run, he could be an Excellent spread QB. The team is fairly weak. Highest player is rated a 83. Would be hard to recruit the state with ND around too. It would be interesting team to try to build up.

I'd second Indiana. I played 1 season with them so far and finished 6-6 with upsets to Ohio State at home but I got dominated by all the other upper Big 10 schools. The freshman QB is a stud but good luck on defense. Recruiting isn't too horrible because they are pipe-lined to Florida.

Minnesota... their offense is really fun to play with while their defense leaves something to be desired. They are a good 2 star team though. Potential bowl team this year.

The other 2 mentioned are great options so I'll go with a different conference and say Vanderbilt or Washington State.

Vandy would be fun. Great uniforms, a couple of decent players, but a murderous schedule and a very challenging recruiting situation.

I chose Ole Miss for this very reason although my heart lies with Indiana. I might switch and play as Indiana as I think both pose a great challenge but any bad team in the SEC really has a tougher task.
