How to setup CPU vs CPU in FC 25 ?

I am a true Novice with this game --- in fact just picked it up this morning for the 1st time ever having an EA Sports Soccer game.

I am trying to play in CPU vs CPU mode. I have read some articles that say this can be done and have even printed out brief instructions on this but have not been able to accomplish such.

Here are the instructions I printed:

1.) Create Second Team Sheet and add Sub on that Squad
2.) Before Start the game flick R3 to Team Sheet 2
3.) Select Lock to Player and select that Sub Player on Team Sheet 2 (or just select sub GK that you put on that Squad
4.) Flick R3 Back to your Main Team Sheet then Start the game
5.) Select Watch The Rest of the Match then you should have AI vs AI with you Managing your team , you can Sub , Change Tactic and Informations

BUT **** I can't even accomplish step 1 above to add a Sub to a 2nd Team Sheet I (Think ? I) created or to Lock the Sub Goal Keeper.

And step two before Starting a game I can't seem to get the R3 button to do anything.

I remember someone stating there was a Video created on Youtube that shows how to do this but I can no longer find that post and have not been able to find anything on Youtube about this.

Any help would be Greatly Appreciated ..... this is for the PS5 Game and I am trying to use it within Tournament Mode.
