Update: After spending all day testing stuff, I think I finally figured it out.
If you know one of these cheesy trick plays is coming you HAVE to guess pass pre-snap (R1+Right Stick Up), otherwise your DBs will bite on a handoff 99% of the time.
You can call a basic cover 2 man with guess the pass and without any user input now they'll stop it about 50/50. What I like to do is user the LB matched up with the HB and just head straight for the QB and sack him every time. Don't put him up to the LOS or he'll be blocked. If you leave him 4-5 yds back at the default start spot you'll get there unblocked most of the time.
Still kinda unfortunate. IMO these trick plays should have like a 5-10% success rate in most standard defenses without any adjustments. Sadly they seem to be an auto-TD about 95% of the time unless you expect it's coming, call the right play, and make adjustments.
