Since the update the gameplay progressively gets choppier the longer i play. I didn't have any issues before. At times it literally freezes for 10 seconds or so.

That is rather odd.

Maybe you had some corruption somewhere.

Try deleting the game data. Reinstall the game with your Ethernet unplugged from the PS3, and then exit the game and patch it.
