I'm pretty sure they're not in the game until they actually play an NHL or AHL game, right?

You'd be right. I'd imagine they'd be in the first roster after the season starts, based on if they've signed the proper paperwork giving EA permission to put them in the game.

I heard that too, but I find it hard to believe they added China. Only country that is missing that should be in the game is Slovenia.
