For a good basic "buffalo wing" making a good basic sauce isnt too hard. Find yourself a good hot sauce, and add melted Butter to it in roughly a 4-1 sauce to butter ratio. I re-iterate, use melted butter, not margarine. From that point you can spice it up however you like to your taste. I like to add in a good bbq sauce with the wing sauce as it tends to make it spicy and flavorful at the same time.

Durkee's/Frank's Red Hot, vinegar, butter and garlic.
If you want them to taste authentic, you MUST fry them, and they should be served with blue cheese dressing (ranch is a sin) and celery sticks.

Ok, first things first, an even bigger sin than ranch over blue cheese, is Tabasco instead of Red Hot. If one uses anything but Frank's Red hot, you have disgraced the check wing!!!
As a Buffalo native, I know there are many ways to make wing sauce but this is how I make min. You MUST deep fry your wings in a deep fat fryer (no baking!!!!). It is important to buy wings which are big, other wise they have a tendancy to get too crisp in the deep fat fryer. Even more, nobody likes small wings. For the sauce I normally use about a 4:1 ratio of Frank's to butter and also a splash of vinegar. I place the mixture in the microwave (to heat the sauce and melt the butter). After heated for about 20-30 seconds I place the fryed wings in the container holding the sauce and I shake it up so the wings are smothered in sauce. Serve with carrots and celery and Marie's Bleu Cheese

I actually have found an alternative to frying that people really like when I make them this way. First off, Frank's has to be the choice for Hot Sauce, though Red Devil is not bad either. I have recently used Frank's Lime and Garlic version and it is awesome as well.
Anyway, what I like to do is blanch the Wings in the Oven until they are no more than half cooked (About 15 minutes at 350) Then soak them in a 4-1 mix of hot sauce butter, then finish them on the BBQ Grill, cooking them just until they start to brown, basting them with the leftover Sauce as they cook. Blanching them first seals in a lot of juices/flavor and also makes them melt in your mouth when they are done. (They tend to dry out a bit if you only grill them) I was skeptical at first since I had tried totally baked Wings before and found them nasty, but after doing them like this we have not fried them since. I don't own a deep frier, so I'm a heathen and have baked my wings . But I find the Frank's Ret Hot Wing Sauce is the best thing out there (and you don't even need to use butter for the Wing Sauce variety of their hot sauce). Tried Texas Pete's Wing Sauce the other night for the SuperBowl because someone at work told me it was good. But it wasn't as good as Frank's.

Hooters Hot Wings 4 1/2 LB - 5 LB. Chicken Wings ( cut into drumettes and flappers) 2 C. Whole Wheat Flour 1 C. All Purpose Flour 2 1/2 tsp. salt 1 tsp. Paprika 1/4 tsp. Cayenne Pepper Methods/steps In large mixing bowl mix flours, salt, paprika and cayenne pepper together, blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture, refrigerate chicken wings for 90 minutes. When ready to deep fry chicken wings heat oil to 375. Place chicken pieces in hot oil, do not crowd. Fry chicken wings until golden brown, remove from oil and drain. When all wings have been fried, place in a large bowl. Add Hot Sauce mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels. Hooters Chicken Wing Hot Sauce 3 Sticks Butter (softened) 1/2 C. + 2 Tbs. Tabasco Sauce 3 Tbs. Brown Sugar 3/4 tsp. Paprika 3/4 tsp. Salt 1 Tbs. Balsamic Vinegar 3/8 tsp. Cayenne Pepper 2 Tbs. Chili Sauce Methods/steps Mix all ingredients together. This will store well in the refrigerator for up to 2 weeks. Serve this with the Hooter's Hot Wings Hooters Special Dipping Sauce for Wings 8 oz Tabasco Sauce 3 Tbsp. brown sugar 2 Tbsp. ketchup Methods/steps Mix all three ingredients together in a small sauce pan. Simmer over medium low heat for 10 minutes, stir frequently. When sauce has simmered and completely blended pour in a small serving bowl and let cool before serving. |
