This little Rant was Inspired by a thread in the Madden Forum...
For the most part, Collectors Edition Video Games are despicable. The Companies that are putting them out are just trying to get a few extra Dollars from the people who care the most about their Video game. These Companies throw in some crap made in some Third World hell hole, Throw in a Concept Art Book, and Finish it off with a DVD with about 20 minutes of actual content that you will never watch again.
Not only are the "extras" pretty much Worthless, but the words "Collectors Edition" implies that is appreciates in value. The Reason why Collectors Edition video Games will not Appreciate in Value is Simple, over production. Just like Baseball Cards, If you make too much of something, it will not be worth as much as something rare.
Not lets look at a few Collectors Edition Games where the Rip off is Obvious.
GTA IV: metal safe deposit box, Rockstar Games keychain, duffel bag, Art of Grand Theft Auto IV book and The Music of Grand Theft Auto IV soundtrack. ( I Bought this, The Duffel Bag was tiny and broke when i first used it, The keychain broke about a month later, and the CD was crap, I still have the Lock box though...)
BioShock: special box with embossed fan-contest winning art, Big Daddy figurine, 3-track EP Soundtrack CD, and behind-the-scenes DVD. In Europe, the game and bonus discs are held in a metal case.
Mortal Kombat vs. DC Universe: Kollector's Edition: Velvet box packaging, exclusive removable Kollector’s Edition print designed by Alex Ross, 16 page printed comic book, making of video programs.
Halo 3: Limited Collector's Edition — a metal case containing the game, a hardcover booklet of the 'Beastarium', and a bonus disc containing documentaries, behind-the-scenes footage at Bungie, and videos. The case itself acts as a container for both discs.
Gears of War: Limited Collector's Edition [101]— a tin case, 'Destroyed Beauty' - the Gears of War hardbound art book, bonus DVD with an inside look at the making of Gears of War, the 'Art of Gears of War' trailer, and 'Gears of War: The Race to E3'.
All of those Games relied on Crap made from China, Stupid DVDs, and a Concept Art book. It added absolutely no extra value to the Game or made the game better in any way. Here are a few Collectors Edition games that actually help the game by depth or actual In game Content:
The Elder Scrolls IV: Oblivion Collector's Edition : bonus 2nd DVD featuring a behind-the-scenes documentary, concept art, a Septims replica coin, and a 112 page "Pocket Guide to the Empire" with historical information, important figure profiles, and other realistically rendered details about the The Elder Scrolls saga.
Fallout 3 Collector's Edition: game disc, manual, a bonus "making of" DVD, a concept artbook, and a 5" Vault Boy Bobblehead, all of which is contained in a Vault-Tec lunchbox.(the Lunch Box is awesome!)
Madden NFL 09: full versions of both Madden NFL 09 and the all-new NFL Head Coach 09.
Call of Duty: Modern Warfare 2 Prestige Edition : Steel book with metallic finish, artbook, token to download the original Call of Duty, Night Vision Goggles, collector's stand to hold your goggles.
Forza Motorsport 2 Limited Collector's Edition: Comes in a carbon fibre style bookcase and contains the game and manual, a 156 page book which details car manufactures, developer interviews and track strategies and a free code to unlock 3 bonus cars on Xbox Live.
In My Opinion, The Greatest Collectors Edition Game had it all, Extra Content about the Game's Story and it only launched with a limited number so it had the potential to increase in price. That game is...
Dead Space: Ultra Limited Edition — Comes in special ultra limited edition packaging containing the game, Dead Space: Downfall Animated Movie, bonus content DVD, exclusive custom lithograph art illustrated and signed by Ben Templesmith, art book, graphic novel, and an Ishimura crew patch. Limited to only 1,000 copies
Currently on Ebay, Dead Space: Ultra Limited Edition is Selling for $171.

The only collectors edition I have ever purchased was the Madden 09 to get Head Coach.

I agree with every game you said. Madden 09 is the only one that I could say its a rip-off but isn't at the same time. The only reason I say that is because it did come with two games at a price that was cheaper. But like you said, it won't ever appreciate in value. They probably could have just said it was a special bundle or something.
