I wonder what the possibility of a utility being created at insert statistics into FOF so that we would have the option to put in players "historical stats before FOF? Right now when you start a career the players have no previous stats and there are no previous records. I know this would be hard to release in the game due to time and licensing and such but it would be nice to have a utility so some geek, like me, could sit down with an almanac and plug in the stats to give the career some history.

That is a good idea. That is the one reason, I don't like starting with real player rosters (but I still do so I can get to know fictional players gradually.)
