I've always assumed that the first "out" athelete would be in the NHL. Like you, I think it would be accepted in the NHL, although I'm not sure I can put my finger on why.
Let's face it, we already know there have been several big name gay NHLers, they just weren't out publicly. But it was reasonably common knowledge, and nobody ever seemed to really go after them.
