Haven't read the manual yet, but you do it by first clicking on the cattle, then select the option to herd them onwards, and then basically the cattle will move in roughly the opposite direction to you if you get near them, so you have to steer the cattle towards where you are taking them. It can be painfully slow. I sort of get right behind the cattle and zig zag so I don't overtake them, and it keeps them going forward.
